Description

Small Batch Claw & Knuckle Maine Lobster Meat

Most lobster meat is processed fast and in bulk. Ours isn't. Every pound is hand-picked, hand-deboned, and blast-frozen. This lobster meat is sorted and cooked by size to avoid overcooking. That's how we get consistently tender, sweet meat — and why our customers keep coming back. Here's what goes into it:

  • Lobsters are sorted and cooked by size to avoid overcooking
  • Cooled in ice water immediately after cooking to stop the cooking process and protect the natural flavor
  • Lobster meat is hand-deboned and checked for shell pieces by hand
  • Wild-caught & sustainably harvested
  • 1 lb. is roughly equivalent to 5 to 6 whole lobsters worth of meat. The 2 lb. option ships as two separate 1 lb. bags so you only thaw what you need
  • Free shipping to the continental US. We ship Monday - Wednesday. Please allow 24-48 hours for order processing. (Orders placed Wednesday- Sunday are processed on Monday).
  • Thaw and enjoy warm or cold or keep frozen until you're ready. Serve alone as a main course or include with a surf and turf dinner. This lobster meat works great for lobster rolls, bisque, or other popular lobster recipes. (according to the USDA, you may re-freeze lobster meat as long as it was thawed properly in your refrigerator).

    Catch & Harvest
Where are the lobsters in your lobster meat caught?
    • Our lobster meat is wild caught and sustainably harvested by small fishing operations in the North Atlantic.
    • This lobster meat is immediately shelled, cooked, and flash-frozen to retain high protein levels, consistent flavor, and maximum freshness year-round.
How many lobsters are in a pound of lobster meat?
    • It takes 5-6 lobsters to make 1 pound of claw and knuckle lobster meat.
    • Approximately 5-6 tails per pound of lobster tail meat depending on the tail size.
Lobster claw and knuckle meat vs. tail meat?
    • Both lobster tail and claw & knuckle meat are flavorful and delicious. It's more about your preference and what you're preparing.
    • The main difference is lobster tail meat is more firm while claw and knuckle lobster meat is generally sweeter and more tender.
    • Tail meat compares more similarly to traditional meat proteins such as steak that are larger and more firm.
    • Traditional lobster rolls are prepared with claw and knuckle meat.
    • We sell both lobster tail and claw & knuckle meat in 2 lb. increments.
    Shipping & Handling
