  • Seal it in airtight bags or containers and press out as much air as you can.
  • Label each bag with what it is, the weight, and the date, then freeze it fast and flat at 0°F.

Write on the bag before you fill it, since a marker will not take to a cold, damp surface, and add a use-by date so you are not doing arithmetic with the freezer door open. Then rotate: new bags to the back, older bags forward.

  • Bag inside a bag. Costs nothing. Zip a freezer bag almost shut, lower it into water until the pressure pushes the air out, seal the last inch, then slide it into a second bag.
  • Rigid containers. Only work when filled: pour melted butter or broth over the lobster until covered, leave half an inch of headspace, then lid it.

Temperature swings drive freezer burn, so store lobster at the back of a middle shelf rather than the door, and know that a full freezer swings less than an empty one.

Should you freeze it cooked or raw?

Cooked lobster freezes better than raw, and the reason is structural: cooking sets the proteins first, so the ice crystals that form later have less soft tissue to tear, while raw picked lobster is fragile and its natural enzymes keep working even in the freezer.
